Toasting Tuesdays

Mexican Meatloaf

2 lbs ground beef or turkey
1 Cup Picante Sauce (2/3 in loaf and 1/3 over top of loaf)
1 Cup Bread Crumbs
1/2 Cup Egg Substitute

Combine above ingredients saving the 1/3 cup picante sauce for top of meat loaf.  Form into a loaf and place into a ovenproof pan sprayed with nonstick spray.  Top with remaining sauce.

Bake at 350 degrees for  1 1/2 hours.


I did this with turkey the other day.. but 1 lbs turkey, 1 cup picante sauce, 1 cup bread crumbs and 2 eggs.

Joshua helped me make it and it turned out soooo good.

I cut back on the mean because there is only three of  and we don't really care for left overs.
