Toasting Tuesday's


Look how yummy!! This is going into my fall recipe box for sure!!!


Honeyed Apples

Ingredients

  • 1/3 cup honey
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 3 tablespoons unsalted butter
  • 3 McIntosh apples, peeled, cored, sliced
  • 1 pint vanilla ice cream

Preparation

  • 1. Stir honey, lemon juice, vanilla, cinnamon, 2 Tbsp. butter and 1/4 cup water in a medium skillet, and bring to a boil over medium-high heat. Stir in apples. Reduce heat to medium and cook, stirring often, until apples are tender and liquid begins to thicken, about 7 minutes. Remove from heat and stir in remaining 1 Tbsp. butter. Transfer to a bowl and let cool for 10 minutes.
  • 2. Divide ice cream among 6 bowls. Top with apple mixture and serve immediately.

Back to School Decorations

I was blog hopping and saw some pictures that gave me an idea for our back to school party at work.

I think this turned out totally adorble, and I cannot wait to bring the jars home so that I can set it up in my house.. it's going to look great on my dining room table!!

Where are the Smith's?

We are tired. Very tired.





We are all birthday'd out!

The weekend after Joshua's birthday party... we had another party...

Then another party after that...

Then a sleep over...

Then two more parties....

I haven't spent a weekend home in over a month. I miss my house.. and my house misses me. It's been very neglected and looks like a dumping ground for a very active family. My toilets are screaming at me to be cleaned..... My lawn is threatening to kill itself if I don't cut and water it...

my poor house... keeps falling apart...

This week the faucet decided to spit back at me and flooded the area under the sink... fun fun!

Not to mention.. I have a summer cold.

I'm worn down. I'm tired.

I promise I have much more coming. I have even been working on some crafty projects... so excited the holidays are coming up. I can't wait!!!

But for now.. I must get back to work. Hopefully tonight I can leave early and maybe clean the dining room... maybe.

and pray nothing else decides to break.

The Skating Party

Our life has just been rolling on by... faster than we could imagine. We are so behind in everything, but moving on at a speed that suits us.. and doesn't cause us to stress out... too much!  There still is stress, believe me.. I don't like my husband being gone. I don't like being a single parent even for a few months.

When John first left I knew I was going to miss him, but I though.. Great! .. I can go through my pictures and sort them out. I can start Joshua's 3 year old scrapbook. I can blog!! Every night!

None of that has happened.

By the time 8 p.m. rolls around, all I want to do is sleep.

We have been up to lots of exciting things though....



This is the second time Joshua has gone roller skating, but the first time he has been able to skate by himself.

I was amazed...if I wasn't so focused on getting pictures, I would of cried. He is growing up.. too fast. He is becoming his own little person. He is learning. He is loving. He is making new friends and realizing what it takes to actually keep friends. He is learning to share and learning to play.



Lilly is learning to skate too!

He had to take a brief time out.. to watch our family and friends go 'round and round'.

His Godmother, Gwen, guides him across the floor.


We sing Happy Birthday to the birthday boy and girl.





We don't know where life will take us.. we are going to keep on rolling into the unknown while enjoying every minute of it...





...because we know... one day he will let go of the safety bars.. and coast along... all by himself....

The Wave Pool


Adjusting...

I am still adjusting...

To working 40+ hours a week.. to driving 10+ hours to get to and from my job...
To being a single parent in a two parent household...
To taking care of a house all by myself....
To doing it all.....

and now, more than ever, do I realize I miss my husband. I miss him.. because I love him... but now I am realizing how much he did.. how much he helped out. He is my other half. He is my sanity.

I cannot wait until he gets back home.


This weekend, I attempted to be a single parent at a birthday party that was hosted at a local wave pool. The pool was fun.. and the party was great... but the idea of me in a bathing suit...  ::cringe::: .   I didn't want my friends to see my thighs..

but they had to... because my son shows no fear.

3 years old and he dives into the water heading for the deep end.

He doesn't know how to swim.



Then the waves come out of nowhere.. and he is swept away to the side of the pool. Luckily one of our friends was near him and grabbed onto Joshua before anything bad happened.

But it was at this point that I realized I had to put down the camera and do the walk of shame in my bathing suit.




They did have intertubes there.. so I carried one with me.. trying to hide the cottage cheese that rests on my thighs. I'm sure it didn't work too well, but I felt better.

And Joshua?

Well he had a blast!! He loves the water.. my little fish!





By the end of the day.. my feet were raw from the bottom of the pool. My eyes stung because the pool was salt water. I couldn't feel my legs from running after Joshua so much. It was defiantly a day I needed John. It was a 2 parent day.

However... at the end of the day, when he smiles and says.. "Mama, I had fun today! Your the best!" .... I forget all those things. I forget how hard of a day I had. I forget cursing under my breath as the life guard blew his whistle at Joshua for running down the side.

I forget... and I smile too.

The Home Management Binder

A friend introduced me to her binder....

and now I am obsessed....

I want one!! I need to have one! make one!

I'm all out of printer ink.. boooo!!!!

But I want a home management binder.  Look how pretty...




and I love this one...




The above one is from Sustainably Chic Designs and I want it!! She also has great instructions on what a home management binder is... (like its not in the title)... but yea.. guides to what things you might want in your binder.

And Life... Your Way has some pretty awesome free printable as well as the ones listed in Sustainably Chic Designs.


Ok.. off to look at more binder printables.. I am storing up and saving them .. until I have ink.

Can't wait to be more organized.. not to mention this would totally help in the case of a hurricane.
